Coconut oil has been used for thousands of years as cooking oil, particularly in Southeast Asian countries, where it grows in abundance. In America, 19th century cookbooks promoted it. It is prized for its stability that allows it to remain fresh and not turn rancid quickly as many oils do. Beginning several decades ago, saturated fats received extensive bad publicity and declined in use. As a result, very few people today know about the potential benefits of including coconut oil in their diets. Early studies seemed to link saturated fats to increased cholesterol and risk of coronary heart disease. Those studies used hydrogenated oil, which altered the oil and eliminated the essential fatty acids that give coconut oil its health benefits.
Research now shows that the body needs some saturated fat for optimum health. Virgin coconut oil is a good source since it contains easily digestible medium chain triglycerides (MCT). Coconut oil may also have a positive impact on cholesterol levels. It is believed that coconut oil can help stimulate the thyroid, resulting in an enzymatic process that converts cholesterol into helpful agents like DHEA and progesterone. Researchers of recent studies looked at the effect of increasing levels of lauric acid and myristic acid in the diet. In these instances, LDL cholesterol levels declined while HDL levels increased, resulting in a better ratio of HDL to LDL. A review of studies conducted on those whose diets were high in coconut and coconut oil concluded that coconut oil leads neither to increased serum cholesterol nor increased risk of death due to coronary heart disease. While many studies exist, more are needed before specific health benefits can be established.
